Commercial Red Meat Production Up

US - Commercial red meat production for the US totaled 3.91 billion pounds in May, up five per cent from the 3.73 billion pounds produced in May 2010, according to the USDA's National Agricultural Statistics Service (NASS).

Beef production, at 2.13 billion pounds, was two per cent above the previous year. Cattle slaughter totaled 2.82 million head, up one per cent from May 2010. The average live weight was up 3 pounds from the previous year, at 1,253 pounds.

Veal production totaled 10.3 million pounds, two per cent above May a year ago. Calf slaughter totaled 61,100 head, up one per cent from May 2010. The average live weight was up two pounds from last year, at 288 pounds.

Pork production totaled 1.76 billion pounds, up nine per cent from the previous year. Hog slaughter totaled 8.54 million head, up seven per cent from May 2010. The average live weight was up three pounds from the previous year, at 275 pounds.

January to May 2011 commercial red meat production was 20.0 billion pounds, up two per cent from 2010. Accumulated beef production was up one per cent from last year, veal was down three per cent and pork was up two per cent from last year.

While May 2010 contained 21 weekdays (including one holiday) and 5 Saturdays, May 2011 contained 22 weekdays (including one holiday) and 4 Saturdays.
