Salt Targets Welcomed by Dairy UK
UK - Dairy UK welcomed the publication of new salt targets for hard cheeses by the Food Standards Agency.Technical Director Ed Komorowski said: “We have worked hard to explain the cheese making process to the FSA to ensure that targets were practical. At 1.8g salt per 100g of product, the level unveiled today for cheese is undoubtedly challenging, but the industry will strive to achieve this as an average over all cheeses. Dairy UK will continue to work with members to help them hit these targets.
“Cheese makers are committed to reducing salt levels as far as practicable, but salt is an essential ingredient in ensuring the safe and correct maturation of hard cheeses. It is present in cheese at less than two per cent, meaning that a normal portion of Cheddar will contain about 0.6g of salt. By contrast, the FSA recommends adults consume no more than 6g of salt daily.”
